Olivetani – IGT Veneto Bianco
Our “cru” version of the oldest Euganean DOC.
Under the austere profile of the Hermitage of the Olivetani, at the foot of Monte Venda, lie the vines of Tai, Pinot, Garganega, Muscat and other local varieties that give life to this white wine aiming to combine flavor and freshness in a personal interpretation.
Tai bianco, Pinot Bianco, Garganega, Moscato Bianco, others in small quantities.
13 % vol.
In the Valley of Faedo. Mostly old vines, on a sandy and slightly clay soil with both trachytic lavas debris and euganean marl, deep and well endowed with organic matter.
It ferments part in stainless-steel tanks and part in old and large barrels; it spends several months on its lees in large barrels. Then it rests and decants in cement tanks for 10-12 months, to be finally bottled after about 2 years from the harvest. It is not clarified nor filtred.
Service and pairing
Serve at 12-14 °C. It is a very versatile wine at the table, try it with the Montagnana ham. We recommend the consumption between the 2nd and the 4th year of age.
